Candied Crab Apples

3 crab apples
3 cinnamon sticks
½ cup sugar
½ cup water 

• Remove stems from apples. Carefully press cinnamon stick into top of apple. Repeat with remaining apples and cinnamon sticks. Set aside.
• In a small saucepan with a candy thermometer attached to the side, combine sugar and water. Allow mixture to cook to 340° (sugar will be an amber color at this temperature) over medium-high heat on stove top, 20 to 25 minutes. (Caution: Mixture is very hot!)
• Remove from heat, and carefully roll prepared apples in caramel. Place apples on parchment paper to dry.
