Cranberry and Apricot Chutney

1 (8-ounce) package fresh cranberries
1 (7-ounce) package dried apricots, chopped
2/3 cup apricot preserves
1/2 cup water
1 shallot, finely diced 


• In a medium saucepan over medium heat, combine the cranberries, apricots, apricot preserves, water, and shallot. Cook until reduced by a third, approximately 20 minutes.
• Remove from heat, and cool completely. Store in refrigerator until ready to use.
