Manchego-Stuffed Figs

Manchego-Stuffed Figs Recipe

12 dried whole figs
1/2 cup sherry
1 cup water
12 thin slices Manchego cheese*
4 pieces prosciutto, each cut lengthwise into 3 thin strips

• In a medium saucepan over high heat, combine figs, sherry, and
water. Bring to a boil, cover, and remove from heat. Set aside for
1 hour. Remove figs from liquid. Discard liquid.
• Cut a lengthwise slit through the middle of each fig, leaving tops
and bottoms intact. Place a slice of Manchego inside each slit,
and wrap each fig with a strip of prosciutto.


*Manchego cheese is a nutty, buttery sheep’s-milk cheese and is available
at specialty-foods stores.
