• In a medium saucepan over high heat, combine figs, sherry, and
water. Bring to a boil, cover, and remove from heat. Set aside for
1 hour. Remove figs from liquid. Discard liquid.
• Cut a lengthwise slit through the middle of each fig, leaving tops
and bottoms intact. Place a slice of Manchego inside each slit,
and wrap each fig with a strip of prosciutto.
*Manchego cheese is a nutty, buttery sheep’s-milk cheese and is available
at specialty-foods stores.
