Bite-size brittle created from matzo, chocolate, and toasted almonds is a delightful accompaniment to a cup of tea.

6 sheets unsalted matzo
2 cups sugar
1 cup water
2 tablespoons butter
8 (1-ounce) pieces bittersweet chocolate
1/2 cup sliced almonds, toasted
• On a silicone baking mat, place matzo sheets side by side in a
square pattern. Set aside.
• In a medium saucepan over high heat, combine sugar, water, and
butter. Cook until mixture registers 355° on a candy thermometer.
Carefully pour mixture over matzo, spreading with a spatula
to cover. Allow toffee mixture to cool and harden, approximately
• Meanwhile, place chocolate in a microwave-safe bowl, and
microwave on high in 30-second intervals, stirring well between
each interval, until melted, 1 to 1 1/2 minutes total. Spread chocolate
mixture over toffee mixture. Sprinkle evenly with almonds.
• Allow mixture to cool and harden at room temperature for 2 1/2
hours. Break brittle into bite-size pieces.
