In a medium saucepan over medium heat, combine the honey,
cardamom, cloves, orange rinds, allspice, star anise, ginger, cinnamon,
and nutmeg. Cook until honey is warm. Remove from
heat, cover, and steep for 10 minutes. Gently reheat honey until it
is easy to pour. Pour into desired containers.
Note: Honey will keep for up to 4 weeks, stored in an airtight container.
