1 cup vanilla-wafer crumbs
2/3 cup finely ground almonds
4 tablespoons unsalted butter, melted
1 1/4 cups sugar, divided
1 tablespoon plus 1 teaspoon fresh orange zest, divided
1/8 teaspoon salt
2 large eggs
1/3 cup fresh orange juice strained of pulp
2 tablespoons all-purpose flour
Confectioners’ sugar for dusting
• Preheat oven to 350°.
• In a large bowl, combine the vanilla-wafer crumbs, almonds,
butter, ¼ cup sugar, 1 teaspoon orange zest, and salt. Spray
a 9-x-9-inch glass baking dish with nonstick cooking spray.
Pour crumb mixture into the prepared pan, and press firmly
into the bottom.
• Bake for 10 minutes, or until edges are golden brown. Set
aside to cool.
• In a medium bowl and using an electric mixer at medium-high
speed, combine remaining 1 cup sugar and eggs, and
mix until smooth, about 5 to 6 minutes. Add remaining 1
tablespoon orange zest and orange juice to egg mixture, and
beat to combine. Fold in the flour. Pour filling into crust.
• Bake for 20 to 25 minutes, or until filling is set. Transfer to
a wire rack to cool. Cut into 12 (2-x-1-inch) rectangles. Dust
tops with confectioners’ sugar before serving.
