• In the work bowl of a food processor, pulse wafers until crumbly.
In a large bowl, combine wafer crumbs and 1 1/4 cups confectioners’
sugar. Stir in pecans.
• In a small bowl, combine the melted butter and orange juice concentrate.
Add butter-juice mixture to crumb mixture, and stir well to combine.
Refrigerate for 1 hour.
• Shape dough into bite-size balls. Spray the bottom of a drinking
glass with nonstick cooking spray, and gently flatten cookies.
Dust lightly with remaining confectioners’ sugar. Store refrigerated.
