1 1/2 cups baby arugula
1 1/2 cups baby mâche
1 cup sunflower tendrils*
1 cup microgreens
2 tablespoons extra-light olive oil
2 tablespoons lemon juice
1 1/3 teaspoons coarse salt
• In a medium bowl, combine arugula, mâche, sunflower tendrils, and microgreens, tossing well.
• Add oil and lemon juice to greens, tossing to coat evenly.
• Divide greens among 4 serving plates. Sprinkle each serving with 1/3 teaspoon salt.
*Sunflower tendrils, or sprouts, are available at some supermarkets, farmers’ markets, and many specialty-foods stores.
