Basil Vinaigrette

Basil Vinaigrette

3 tablespoons fresh lemon juice
3 tablespoons tarragon vinegar
3 tablespoons minced fresh basil
2 tablespoons minced shallot
1 tablespoon coarse Dijon-style mustard
1/2 teaspoon coarse salt
1/2 teaspoon ground black pepper
1/2 cup extra-light olive oil 

• In the container of a blender, combine lemon juice, vinegar, basil, shallot, mustard, salt, and pepper. Blend until mixture is uniform.
• With motor running, slowly add oil, blending until mixture is emulsified.
