Sliced English cucumbers become a piquant garnish for soups and salads when braised with butter, salt, and pepper.
2 tablespoons unsalted butter
1 cup sliced English cucumber
1/4 teaspoon coarse salt
1/4 teaspoon ground black pepper
• In a large skillet, melt butter over medium-high heat.
• Add cucumber to skillet. Cook until cucumber is browned, approximately 6 minutes.
• Place lid on pan, remove from heat, and let stand for approximately 7 minutes. Season with salt and pepper.
