Lima beans are reinvented when pureed with fresh herbs and packed in crisp fluted tartlet shells.

1 (16-ounce) package frozen lima beans, thawed
2 cups water plus 2 tablespoons, divided
¼ cup plus 2 tablespoons mayonnaise
2 tablespoons olive oil
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh parsley
1 (7-ounce) package tartlet shells*
Garnish: shaved Parmesan cheese and pea tendrils
• In a medium saucepan, combine beans and 2 cups water. Simmer over medium heat for 15 minutes. Drain beans.
• In the work bowl of a food processor, combine beans, remaining 2 tablespoons water, mayonnaise, olive oil, chives, and parsley, pulsing until smooth. Spoon approximately 1 tablespoon mixture into each prepared tartlet shell.
• Garnish with shaved cheese and pea tendrils, if desired. Serve immediately.
*For testing purposes, we used Sable & Rosenfeld Party Cups, which can be purchased at specialty markets or from various online retailers.
