Open-Face Salami Sandwiches

1 (12-ounce) package English muffins, halved horizontally
1/2 cup crème fraîche
1 tablespoon minced fresh chives
2 teaspoons minced fresh tarragon
1 teaspoon minced fresh parsley
1/4 teaspoon fresh lemon zest
1/4 teaspoon salt
1/4 teaspoon ground black pepper
12 (1/4-inch-thick) slices Italian dry salami
3 teaspoons whole-grain mustard
Garnish: 12 small fresh tarragon leaves


• Cut each English muffin half into a 2 1/2-inch square, and toast
until lightly golden.
• In a small bowl, combine the crème fraîche, chives, tarragon,
parsley, lemon zest, salt, and pepper, stirring well.
• Place toasted squares on a serving tray, spread 2 teaspoons
crème fraîche mixture on each square, and top each with a
salami slice and 1/4 teaspoon mustard.
• Garnish each with a tarragon leaf, if desired.
