1 ripe organic avocado, peeled, pitted, and chopped
1 (3-ounce) package organic cream cheese, softened
2 teaspoons fresh lime juice
2 tablespoons chopped fresh cilantro
1/2 teaspoon salt
1/4 teaspoon ground black pepper
8 slices whole-grain bread, crusts removed
4 slices organic provolone cheese
8 slices all-natural roasted turkey breast
Garnish: 36 thin slices cherry tomato, 12 blanched chives
• In the work bowl of a food processor, combine avocado, cream
cheese, and lime juice, pulsing until smooth. Add cilantro, salt,
and pepper, pulsing to combine.
• Spread approximately 2 teaspoons avocado mixture on a bread
slice. Top with a cheese slice and two turkey slices. Top with
another bread slice. Using a serrated knife, carefully cut sandwich
into 3 equal rectangles. Repeat with remaining ingredients.
• Garnish each finger sandwich with 3 overlapping cherry tomato
slices, and tie with a blanched chive, if desired. Serve immediately.
