Roast Beef and Horseradish Tea Sandwiches

9 slices rye bread, crusts removed
1 recipe Horseradish Cream (see Download for recipe)
9 (2-inch) squares Swiss cheese
½ pound thinly sliced deli roast beef
Garnish: microgreens

• Cut each slice of rye bread into 2 (2-inch) squares.*
• Spread Horseradish Cream on 9 bread squares. Top each with 1 slice Swiss cheese and desired amount of roast beef. Top with remaining bread squares.
• Garnish with microgreens, if desired.

*We used a 2-inch square cutter instead of a bread knife to achieve uniformity.
