Radish Pinwheels

2 pieces soft sourdough sandwich bread, crusts removed
3 tablespoons butter, softened
1 1/2 tablespoons finely diced radish
1 tablespoon chopped fresh tarragon
1/4 teaspoon salt
1/4 teaspoon ground black pepper


• Using a rolling pin, flatten bread slices.
• Spread butter evenly over bread slices. Sprinkle radish, tarragon,
salt, and pepper evenly over top. Roll bread jelly-roll style,
and wrap tightly in plastic wrap. Refrigerate for 1 hour. Remove
plastic wrap, and cut into 1/2-inch slices.
