Luck O'The Irish Pea Soup

1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
4 cups chopped yellow onion
1 tablespoon minced garlic
8 cups unsalted chicken broth
6 cups petite sweet green peas
1 ham hock
½ cup heavy whipping cream
1 teaspoon coarse salt
½ teaspoon ground white pepper
3 tablespoons white truffle oil
Garnish: croutons

• In a large stockpot, heat oil and butter over medium-high heat. Add onion and garlic. Cook until onion is translucent, 6 to 8 minutes.
• Add broth, peas, and ham hock. Bring to a boil. Reduce heat, and simmer for 30 minutes. Add cream, stirring to combine. Remove from heat, and let cool for 20 minutes. Discard ham hock.
• Working in batches, transfer soup to the container of a blender, and purée until smooth. Add salt and pepper.
• Ladle soup into serving dishes. Drizzle each serving with truffle oil. Garnish with croutons, if desired.
