Shrimp Salad BLT Bites Recipe

1 cup mayonnaise
1/2 cup minced celery
3 tablespoons dill-pickle relish
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
2 tablespoons drained and chopped capers
2 teaspoons whole-grain mustard
1 1/2 teaspoons chopped shallot
1 teaspoon hot pepper sauce
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 pound cooked shrimp, peeled and deveined
24 slices wheat bread, toasted
24 slices pancetta, cooked
12 cherry tomatoes, quartered
Garnish: pea tendrils

 • In a medium bowl, combine mayonnaise, celery, relish, parsley,
chives, capers, mustard, shallot, hot pepper sauce, Worcestershire
sauce, salt, and pepper. Add shrimp, and toss until well combined.
• Using a 2 1/2-inch oval-shaped cutter, cut bread. Top each piece of
bread with a pancetta slice, then spoon about 2 tablespoons shrimp
mixture atop pancetta, arranging the shrimp as necessary. Top each
with 2 tomato quarters. Garnish with pea tendrils, if desired. Serve
