This smooth and palatable pâté on slices of toasted French baguette is a wonderful appetizer.

1 (8-ounce) package smoked trout
1/3 cup cream cheese, softened
2 teaspoons minced shallot
2 teaspoons fresh lemon juice
1 1/2 teaspoons prepared horseradish
1/4 teaspoon ground black pepper
1 tablespoon minced parsley
24 thin slices French baguette, toasted
Garnish: parsley leaves and thin slices of pear
• In the work bowl of a food processor, combine the trout, cream
cheese, shallot, lemon juice, horseradish, black pepper, and parsley,
and pulse until mixture is just combined.
• Spread each piece of toasted bread with pâté. Garnish with parsley
leaves and thin slices of pear, if desired. Serve immediately.
