Cheddar Scones

2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1 teaspoon salt
¼ cup cold unsalted butter, cut into pieces
¾ cup half-and-half
¾ cup shredded sharp Cheddar, divided

• Preheat oven to 350°.
• Line a baking sheet with parchment paper. Set
• In a large bowl, combine flour, sugar, baking
powder, and salt, whisking to remove any
lumps. Using a pastry blender, cut butter into
dry ingredients until mixture is crumbly. Add
half-and-half, 1 tablespoon at a time, until dry
ingredients are moistened. Add 1/2 cup cheese,
stirring to combine.
• On a lightly floured surface, lightly roll dough
into a 7-inch square. Using a 1 3/4-inch square
biscuit cutter, cut 16 scones. Place on prepared
baking sheet. Sprinkle remaining 1/4 cup cheese
over tops of scones.
• Bake until lightly golden, approximately 10
minutes. Cool completely on baking sheet.
