Chocolate Ganache

4 (4-ounce) bars bittersweet baking chocolate, finely chopped  

1/2 cups heavy cream  

2 tablespoons corn syrup  


• Place the chocolate in a large heatproof bowl. Set aside.

• In a small saucepan, bring the cream and corn syrup to a boil.

Pour the cream mixture over the chopped chocolate. Move bowl

gently to let cream settle. Set the mixture aside until the chocolate

is softened, approximately 4 minutes. Whisk until smooth. 

Use immediately.
