Baby Lima Pâté

1 (16-ounce) package frozen baby lima beans

1¼ teaspoons salt, divided

1/8 teaspoon ground black pepper

2 tablespoons mild olive oil

3 tablespoons fresh lemon juice

2 tablespoons sour cream

½ cup flat-leaf parsley leaves

1 sprig fresh mint leaves



• In a saucepan, cook baby lima beans with 1 teaspoon salt, according

to package directions. Drain well in a colander.

• Place lima beans in the work bowl of a food processor along

with remaining ¼ teaspoon salt, pepper, olive oil, lemon

juice, sour cream, parsley, and mint. Process until all ingredients

are incorporated.

• Transfer to an airtight container, and refrigerate until

needed.

• For best flavor, let pâté come to room temperature before

serving.
