Peach and Grapefruit Salad

Peach and Grapefruit Salad Recipe

2 grapefruits
3 peaches, pitted and sliced
1 cup chopped celery
1/2 cup chopped, toasted hazelnuts
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 medium head Bibb lettuce

• Using a small, sharp knife, peel grapefruit, being careful to remove
all white pith. Working over a bowl, cut segments free from membranes,
and squeeze juice from membranes into a medium bowl.
Reserve 1/4 cup juice.
• In a large bowl, combine the grapefruit segments, peach slices, celery,
and hazelnuts. Set aside.
• Slowly drizzle oil into the reserved grapefruit juice, and whisk well
to combine. Add the salt and pepper, and whisk to combine. Pour
the dressing over the peach-grapefruit mixture, and toss to coat.
• Place 2 to 3 lettuce leaves on each serving plate, and top each serving
evenly with peach-grapefruit mixture. Serve immediately.
