Creamy panna cotta molded in the shape of a thimble and infused with lavender makes a charming addition to any tea.
1 1/2 cups heavy cream
1 cup whole milk
2 teaspoons dried lavender
1/4 cup sugar
1/2 teaspoon vanilla extract
2 (.25-ounce) packages gelatin
1/4 cup water
• In a medium saucepan over medium-high heat, combine the cream and milk, and cook just until liquid boils. As soon as it comes to a boil, remove from heat, add dried lavender, and let mixture steep for 5 minutes.
• Strain the cream mixture through a fine-mesh sieve, and discard lavender. Add the sugar and vanilla extract to the cream mixture, and stir until dissolved.
• In a small bowl, sprinkle gelatin over water, and let soften for 10 minutes. Add the softened gelatin to the cream mixture, and stir until combined.
• Pour into 12 (2-x-2-inch) round molds*; chill for at least 4 hours before serving. Drizzle with honey, if desired.
*For testing purposes, we used a patterned silicone mold. Alternatively, a mini muffin pan may be used.
