Turkey Muffin Sandwiches

2 tablespoons butter
1 large fennel bulb, thinly sliced
1 onion, thinly sliced
1/2 cup cream cheese, softened
1 teaspoon dried rubbed sage
1/2 teaspoon dry mustard
1/4 teaspoon garlic powder
1/8 teaspoon salt
12 Pumpkin-Orange Muffins (see download for recipe)
1/2 pound deli-sliced turkey
2 cups escarole
1/2 pound aged Cheddar cheese, thinly sliced
Garnish: orange zest

• In a small skillet over medium-high heat, melt butter. Add fennel and onion, and cook, stirring occasionally, until caramelized, approximately 20 minutes. Remove from heat, and set aside.
• In a small bowl, combine cream cheese, sage, dry mustard, garlic powder, and salt, and stir to combine. Slice Pumpkin-Orange Muffins in half horizontally, then evenly spread cream-cheese mixture onto top halves.
• Evenly distribute turkey slices on bottom halves of muffins, then layer escarole, cheese, and prepared onions and fennel. Cover with top halves muffin. Garnish with orange zest, if desired.
