Pumpkin Orange Muffins

Turkey Muffin Sandwiches

1 cup sugar
1/2 cup fresh or canned pumpkin puree
2 tablespoons oil
1 large egg
1 tablespoon orange juice
1 teaspoon orange zest
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 teaspoon salt

• Preheat oven to 350°. Spray a 12-cup muffin pan with nonstick spray. Set aside.
• In a medium bowl, combine sugar, pumpkin puree, oil, egg, orange juice, and orange zest, and mix until thoroughly combined.
• In a separate medium bowl, combine flour, baking soda, cinnamon, cloves, ginger, and salt, whisking well. Add flour mixture to pumpkin mixture, and stir until just combined.
• Distribute batter evenly among muffin cups. Bake until a wooden pick inserted in the centers comes out clean, approximately 18 minutes.
