Beautiful and simple to prepare, these finger sandwiches make a tasty addition to any tea party.

1/2 cup butter, softened
1/2 cup chopped Kalamata olives
1/4 cup deli-style mustard
1 tablespoon chopped fresh Italian parsley
1/8 teaspoon ground black pepper
10 slices whole wheat bread
1/4 pound thinly sliced deli roast beef
Garnish: blanched chives, Italian parsley, pimiento
• Using a food processor, combine butter, olives, mustard, Italian parsley, and black pepper. Pulse until mixture is combined but still chunky.
• Spread Kalamata Mustard Butter on each bread slice. Top half of bread slices with thinly sliced roast beef. Place remaining bread slices on top of roast beef. Trim crusts from bread, and cut into finger sandwiches.
• Wrap each sandwich with blanched chive, and tie in knot. Trim ends of chives if necessary.
• Garnish with Italian parsley and pimiento, if desired.
