Brie is a favored party appetizer, and when topped with edible flowers, it becomes even more special.

Impatiens or other edible flower petals, rinsed and patted dry
1 (1/4-ounce) envelope unflavored gelatin
1/4 cup cold water
1 cup white dessert wine (sauterne, piesporter, etc.)
• Remove rind from top of cheese, leaving 1/2-inch border. Arrange
flower petals on Brie.
• In a small mixing bowl, soften gelatin in water for 5 minutes.
• In a saucepan, over medium heat, combine wine and softened
gelatin, stirring until gelatin dissolves. Transfer to a bowl and
let cool completely, stirring frequently.
• Using a pastry brush, gently brush gelatin mixture over top
and sides of flowers and cheese. Refrigerate until set.
• Serve with crackers.
