Champagne Vinaigrette

¼ cup champagne vinegar
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1 teaspoon sugar
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ cup extra-virgin olive oil

• In a medium bowl, combine vinegar, parsley, chives, sugar, salt, and pepper. Whisk until sugar dissolves. Gradually add olive oil, whisking constantly, until well combined. Refrigerate until needed.
