Iced Lemon-Basil Oolong Tea

2 quarts water
5 generous tablespoons plus 1 generous teaspoon lemon-basil oolong tea leaves*
1 recipe Basil Syrup (see Download)
Garnish: fresh basil leaves, lemon slices

• Heat water to 190°.

• Place tea in a saucepan, and add hot water. Cover, and let steep for 5 minutes.

• Strain though a wire-mesh sieve, discarding tea leaves. Let cool to room temperature.

• Serve over ice. Sweeten to taste with Basil Syrup.

• Garnish with fresh basil leaves and lemon slices, if desired.
