Spicy Pecan Pimiento Cheese Sandwiches

2 cups grated sharp Cheddar cheese
1 cup grated Monterey Jack cheese
1 cup grated Pepper Jack cheese
1 cup mayonnaise
½ cup diced pimientos
¼ teaspoon ground black pepper
½ cup finely chopped Spicy Pecans (see Download)
8 slices wheat bread, crust removed

• In a medium bowl, combine Cheddar cheese, Monterey Jack cheese, Pepper Jack cheese, mayonnaise, pimientos, and pepper. Using an electric mixer at medium speed, beat until creamy. Cover and chill.

• Stir in spicy pecans. Spread pimiento cheese evenly on 4 bread slices; top with remaining bread slices. Cut each into fingers. Reserve remaining pimiento cheese for another use.
