Smoked Salmon Rice Cakes

1/2 cup cream cheese
3 tablespoons finely chopped fresh chives
1/4 teaspoon salt
1/8 teaspoon ground ginger
18 bite-size plain rice cakes
1 1/2 (3-ounce) packages smoked salmon
1 English cucumber
18 fresh whole chives


• In a small bowl, mix together the cream cheese, chives, salt,
and ginger until well combined. Spread a small amount of the
cream cheese mixture onto each rice cake. Cut the smoked
salmon into squares about the size of each rice cake, and layer
the salmon over the cream-cheese mixture.
• With a vegetable peeler or mandolin, slice the cucumber into
paper-thin slices. Cut each slice into 2½-inch pieces. Roll a
piece of cucumber into a cylinder, and tie with a chive. Place
a tiny dollop of the cream-cheese mixture in the center of the
salmon, and top with the cucumber roll.
