1 (8-ounce) package dried apples
1 cup apple cider
1/2 cup firmly packed light brown sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon

1/4 teaspoon ground cloves
1/8 teaspoon salt
1 cup sugar
1 cup water
2 tablespoons fresh lemon juice
2 apples, cored and thinly sliced
Garnish: microgreens or fresh mint



• In a small saucepan over medium heat, combine the dried
apples, apple cider, brown sugar, vanilla extract, cinnamon,
cloves, and salt. Stir to combine, and cook until the apples
are soft and the liquid is absorbed, approximately 20 minutes.
Cool completely.
• Preheat oven to 250°.
• Line a baking sheet with a silicone baking mat, and set aside.
• In a sauté pan over medium heat, combine the sugar, water,
and lemon juice. Cook until sugar is dissolved, approximately
3 minutes. Remove from heat.
• Working in batches, place the fresh apple slices in a single
layer in the warm syrup, and let soak for approximately 5
minutes. Place the syrup-soaked slices on the prepared baking
sheet.
• Bake for 30 minutes. Remove from oven, and transfer the
baking sheet to a cooling rack. Cool apple slices for 1 hour.
• Carefully remove the baked apple chips from the mat. Layer
the apple chips and prepared apple filling, beginning and
ending with the apple chips, creating two layers of apple
filling and three layers of apple chips. Top each stack with a
small dollop of apple filling.
• Garnish each with microgreens or mint, if desired. Serve
immediately.
