White Pimento Cheese

1 (8-ounce) block extra-sharp white Cheddar cheese, coarsely shredded
1/4 cup diced pimientos
1/3 cup mayonnaise
1/4 teaspoon ground black pepper

• In a medium bowl, combine cheese and pimientos, stirring well. Set aside.
• In a small bowl, combine mayonnaise and pepper, whisking well. Add to cheese mixture, stirring to incorporate. Set aside.
• Store in an airtight container in the refrigerator for up to 3 days.
