Herbed Champagne Vinaigrette

1/4 cup champagne wine vinegar
2 teaspoons minced fresh chives
2 teaspoons minced fresh dill
1/2 teaspoon finely minced shallot
1/2 teaspoon sugar
1/4 teaspoon fine sea salt
1/8 teaspoon ground black pepper
1/3 cup extra-light olive oil


• In a small bowl, combine vinegar, chives, dill, shallot, sugar, sea salt, and pepper, whisking well. Add olive oil in a steady stream, whisking vigorously until incorporated.
• Cover, and let sit at room temperature until ready to use.

NOTE: Best made day of use, but can be refrigerated in a covered container for 2 to 3 days. Let come to room temperature before serving.
