Lemon-Blueberry Parfaits

1/3 cup crumbled vanilla meringues*
1/2 cup Lemon Curd (see Download for recipe)
1 cup fresh blueberries
1/2 cup cold heavy whipping cream
2 tablespoons confectioners’ sugar
Garnish: fresh mint leaves and blueberries

• In each of 8 (½-cup) parfait glasses, layer 1 teaspoon crumbled meringues, 1½ teaspoons Lemon Curd, and 1 tablespoon blueberries. Repeat once. Set aside.
• In a medium bowl, combine cream and confectioners’ sugar. Beat at high speed with an electric mixer until thickened.
• Place whipped cream in a piping bag fitted with a large open-star tip, and pipe onto parfaits.
• Garnish with mint leaves and blueberries, if desired.
• Serve immediately.

*We used Miss Meringue Vanilla Meringue Cookies.

Store-bought lemon curd may be substituted.
