Sesame-Ginger Chicken Salad Sandwiches

1/4 pound deli smoked chicken breast
3 tablespoons mayonnaise
1/2 teaspoon sesame oil
1 teaspoon low-sodium soy sauce
1/2 teaspoon ground ginger
1/4 cup chopped green onion
12 thin slices wheat bread, cut into 3 1/2- to 4-inch squares, crusts removed
1/4 cup matchstick carrots


• In the work bowl of a food processor, combine the chicken,
mayonnaise, oil, soy sauce, and ground ginger. Pulse a few
times to combine, being careful not to overprocess. Scoop the
mixture into a large bowl, and stir in the green onion.
• Place a slice of bread on a flat surface. Place 2 tablespoons of
the chicken salad on the center of the bread. Place 4 to 5 carrots
in the center of the chicken salad, then wrap the bread
into a cone around the chicken salad, being sure to leave one
end open and the carrots showing.
• Place a toothpick through the center to hold the bread in place.
Place sandwiches on a tray, wrap with plastic wrap, and refrigerate
for 1 hour. Remove toothpicks before serving.
