• In a large bowl and using an electric mixer at high speed, combine
the egg whites, cream of tartar, salt, and vanilla extract,
beating until foamy. With the mixer running, add the sugar, 1
tablespoon at a time, and beat until stiff glossy peaks form and
sugar is dissolved.
