Black-Bean-Banana Rice Squares

3/4 cup sushi rice
1 (13.5-ounce) can coconut milk
4 tablespoons water
2 tablespoons sugar
1 teaspoon fresh orange juice
1/4 teaspoon fresh orange zest
1/8 teaspoon salt
3 tablespoons cooked black beans
1/2 banana, sliced into 1/4-inch-thick rounds
Garnish: orange zest and chopped pistachios


• In a medium saucepan over medium-high heat, combine the
rice, coconut milk, water, sugar, orange juice, orange zest, and
salt. Bring to a boil. Reduce heat to medium, and stir constantly
until the rice is tender and the coconut milk is absorbed. Remove
from heat, and cool slightly.
• Place approximately 1 tablespoon cooked rice on a small
rectangular piece of foil. Press a few black beans into the rice.
Top with a piece of banana, then top with 1 tablespoon cooked
rice. Fold the foil into a neat square over the rice. Repeat with
remaining rice, beans, and banana slices.
• In a bamboo steamer or conventional steamer, steam foil packets
for 10 to 15 minutes. Remove from steamer, and let cool
slightly. Remove and discard foil.
• Garnish with orange zest and chopped pistachios, if desired.
