Zesty and bold, this Red Wine–Mustard Vinaigrette is lovely atop our Marinated Green Bean Salad, but makes a delicious dressing on other dishes as well.
Red Wine–Mustard Vinaigrette

Ingredients
- 2 tablespoons red-wine vinegar
- 1 tablespoon fresh lemon juice
- 2 teaspoons Dijon-style mustard*
- 1 teaspoon finely minced shallot
- ½ teaspoon sugar
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 3 tablespoons extra-light olive oil
Instructions
- In a small bowl, combine red-wine vinegar, lemon juice, mustard, shallot, sugar, salt, and pepper, whisking well. Add olive oil in a steady stream, whisking vigorously until blended.
Notes
- *For testing purposes, we used Grey Poupon Country Dijon Mustard.
