
Crisp salty bacon, stuffed in a cherry tomato with Basil Cream Cheese, is fresh, light, and tasty — just like a BLT.

BLT Bites with Basil Cream Cheese

Ingredients
- 1 pint heirloom cherry tomatoes, cut in half horizontally
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- Basil Cream Cheese (see below)
- 6 slices bacon, cooked and cut into 1-inch pieces
- 24 fresh basil leaves
- 24 wooden picks
Instructions
- Using a serrated melon baller, carefully scoop seeds from both halves of each tomato. Discard seeds.
- Lightly sprinkle inside of each tomato with salt and pepper. Pipe or spread approximately 1 teaspoon Basil Cream Cheese into one half of each tomato.
- Top with 1 bacon piece and 1 basil leaf. Top with remaining tomato half. Skewer with a wooden pick. Serve immediately.

Basil Cream Cheese

Ingredients
- 1 (3-ounce) package cream cheese, softened
- 1 (4-ounce) package goat cheese, softened
- 3 tablespoons finely chopped fresh basil
- 1/8 teaspoon salt
Instructions
- In a medium bowl, using an electric mixer at medium speed, combine the cream cheese and goat cheese. Beat until smooth.
- Add the basil and salt, and beat until combined. Refrigerate until ready to use.
