Carrot Cake Mini Muffins

Carrot Cake Mini Cupcakes

Ingredients
  1. 1½ cups vegetable oil
  2. 1½ cups sugar
  3. 4 large eggs, well beaten
  4. 1 pound carrots, peeled and finely grated
  5. 2 cups unbleached all-purpose flour
  6. 2 teaspoons baking soda
  7. 2 teaspoons ground cinnamon
  8. ½ teaspoon salt
  9. ½ teaspoon ground nutmeg
  10. ¼ teaspoon ground cloves
  11. ¼ teaspoon ground mace
  12. 1 cup finely chopped walnuts
  13. 1 cup golden raisins
  14. 1 teaspoon vanilla extract
  15. 1 recipe Cream Cheese Frosting (recipe follows)
  16. Garnish: edible flowers*
Instructions
  1. Preheat oven to 325°.
  2. Line 3 (24-well) mini muffin pans with paper liners. Set aside.
  3. In a large mixing bowl, combine oil and sugar. Add eggs and carrots, stirring to combine. Set aside.
  4. In another bowl, combine flour, baking soda, cinnamon, salt, nutmeg, cloves, and mace, whisking well. Add flour mixture to carrot mixture, stirring to combine. Add walnuts, raisins, and vanilla extract, stirring gently to blend. Divide batter evenly among wells of prepared muffin pans.
  5. Bake until a wooden pick inserted in the centers comes out clean, approximately 15 minutes. Remove cupcakes from pans, and let cool completely on wire racks.
  6. Place Cream Cheese Frosting in a piping bag fitted with a large open-star tip (Ateco #848). Pipe frosting onto cooled cupcakes. Refrigerate until serving time.
  7. Garnish with edible flowers, if desired.

Yield: 2½ cups • Preparation: 5 minutes

  1. ½ cup salted butter, softened
  2. 1 (8-ounce) package cream cheese, softened
  3. 1 (1-pound) box confectioners’ sugar
  4. 1 teaspoon vanilla extract
Instructions
  1. In a large mixing bowl, combine butter, cream cheese, confectioners’ sugar, and vanilla extract. Beat at medium speed with an electric mixer until smooth.
  2. Use immediately.
