Mint Pesto
Serves: 1 cup
 
Ingredients
  • 2 cups fresh mint
  • ½ cup grated Parmesan cheese
  • ½ cup olive oil
  • ⅓ cup cashews
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice (approximately ½ lemon)
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
Instructions
  1. In the work bowl of a food processor, combine mint, cheese, oil, cashews, garlic, lemon juice, salt, and pepper. Process until smooth, approximately 1 minute. Transfer pesto to a serving dish. Cover with plastic wrap, and refrigerate until serving time, up to 2 hours.
