1 tablespoon fresh lemon juice (approximately ½ lemon)
¼ teaspoon salt
¼ teaspoon ground black pepper
Instructions
In the work bowl of a food processor, combine mint, cheese, oil, cashews, garlic, lemon juice, salt, and pepper. Process until smooth, approximately 1 minute. Transfer pesto to a serving dish. Cover with plastic wrap, and refrigerate until serving time, up to 2 hours.
