Apricot Jelly
Serves: 1 3⁄4 cups
  • 1¾ cups plus 3 tablespoons strained apricot purée, divided
  • 1 (0.25-ounce) envelope unflavored gelatin
  1. In a small bowl, stir together 3 tablespoons apricot purée and gelatin. Let stand for 5 minutes.
  2. In a small saucepan, bring remaining 1¾ cups apricot purée to a boil over medium heat. Add gelatin mixture, whisking until gelatin dissolves. Strain mixture through a fine-mesh sieve into a medium bowl. Let cool slightly.
