Coconut-White Chocolate Buttercream
Serves: 2½ cups
  • 1 cup unsalted butter, softened
  • 2 cups white chocolate morsels, melted and cooled
  • 1 cup confectioners’ sugar
  • ¼ teaspoon salt
  • ¼ cup coconut milk
  • ⅛ teaspoon coconut extract
  1. In the bowl of a stand mixer fitted with the paddle attachment, beat butter at medium speed until smooth, 2 to 3 minutes. Add white chocolate, beating well. Reduce mixer to low speed. Gradually add confectioners’ sugar and salt, beating until combined. Add coconut milk and coconut extract, beating until light and fluffy, 2 to 3 minutes. Use immediately.
