Mock Clotted Cream
Serves: 1 cup
  • 1 cup cold heavy whipping cream
  • ½ cup mascarpone cheese
  • 2 tablespoons confectioners’ sugar
  1. In a medium mixing bowl, beat together cream, mascarpone cheese, and confectioners’ sugar with a mixer at high speed until combined and thick.
  2. Cover, and refrigerate until needed, up to 3 days.
