In a small saucepan, bring strawberries, sugar, water, lemon juice, and vanilla extract to a boil over medium-high heat. Using a potato masher, mash strawberries. Reduce heat to medium, and simmer, stirring frequently, until reduced and thickened, 12 to 15 minutes.
Remove from heat. Strain sauce through a fine-mesh sieve into a bowl; discard solids. Stir in pomegranate molasses. Refrigerate until completely chilled.
