Golden Kiwi Jam
Serves: approximately 1 cup
  • 4 large golden kiwis, peeled and quartered
  • 1 cup granulated sugar
  • ¼ cup water
  • 2 teaspoons fresh lemon juice
  1. In a small saucepan, combine kiwis, sugar, ¼ cup water, and lemon juice. Bring to a boil over medium-high heat. Reduce heat, and let mixture simmer, uncovered, until thickened, 15 to 20 minutes. Remove from heat.
  2. Using a potato masher, mash kiwi mixture until slightly chunky. Let cool completely before transferring to an airtight container. Refrigerate until needed, up to a week.
