Gluten-Free, Low-Carb, Low-Sugar Apple Crisp
 
Makes 4 servings
Ingredients
  • ½ cup butter, cut into 8 pieces
  • ¾ cup granulated no-calorie sweetener*
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1½ pounds apples**, peeled, cored, and cut into 1-inch cubes
  • 2 teaspoons water
  • ½ cup old-fashioned rolled oats
  • ½ cup blanched almond flour
  • ¼ cup brown sugar no-calorie sweetener***
  • ⅛ teaspoon baking powder
  • ⅛ teaspoon xanthan gum
Instructions
  1. Place butter in a 9-inch square baking dish. Place baking dish in the oven while it preheats to melt butter. Remove baking dish from oven when butter melts and pour almost all of it into a medium bowl.
  2. In a large bowl, stir together granulated sweetener, cinnamon, and salt.
  3. In a separate bowl, toss together apples and enough of the 2 teaspoons water to lightly wet apple chunks. Add apples to cinnamon mixture, stirring to coat as evenly as possible. Spoon apples into prepared baking dish. If there is any cinnamon mixture left, sprinkle it over apples.
  4. To the melted butter, stir in oats, almond flour, brown sugar sweetener, baking powder, and xanthan gum. Spread, drop, or sprinkle mixture over apples.
  5. Bake until browned and bubbling, 35 to 40 minutes. Let cool for 5 to 10 minutes before serving.
