Green Chile Muffins

Stuffed with Monterey Jack cheese and fire-roasted green chiles, these Green Chile Muffins are a tasty teatime treat.

Ingredients
  1. 5 tablespoons melted butter, divided
  2. ½ cup all-purpose flour
  3. 1½ cups stone-ground yellow cornmeal
  4. 1 tablespoon sugar
  5. 2½ teaspoons baking powder
  6. ¾ teaspoon salt
  7. 1 cup shredded Monterey Jack cheese
  8. 1 large egg
  9. 1 cup whole milk
  10. 1 (4-ounce) can fire-roasted green chiles, drained
  11. 1 (8.5-ounce) can cream-style corn
  12. 1 recipe Chipotle Butter (recipe follows)
Instructions
  1. Preheat oven to 425°.
  2. Brush 16 wells of muffin pans with 1 tablespoon melted butter. Set aside.
  3. In a large bowl, combine flour, cornmeal, sugar, baking powder, and salt, whisking well. Add cheese, stirring to combine. Set aside.
  4. In a medium bowl, combine egg, remaining 4 tablespoons melted butter, milk, chiles, and corn, stirring until blended. Add egg mixture to flour mixture, stirring just until all ingredients are incorporated.
  5. Using a levered 1⁄4-cup scoop, divide batter among prepared wells of muffin pans.
  6. Bake until a wooden pick inserted near the center comes out clean, 10 to 12 minutes. Remove muffins from pans, and cool slightly on wire racks.
  7. Serve warm with Chipotle Butter, if desired.

Chipotle Butter
Yield: ½ cup • Preparation: 5 minutes • Refrigerate: 2 hours

  1. ½ cup salted butter, at room temperature
  2. 1 teaspoon finely minced chipotle pepper*
  3. 1 teaspoon adobo sauce*
Instructions
  1. In a small bowl, combine butter, chipotle, and adobo sauce, stirring until well blended. Transfer mixture to a piece of plastic wrap. Roll mixture into a log, wrap well, and twist plastic-wrap ends to seal.
  2. Refrigerate until firm, approximately 2 hours. When ready to serve, slice into pats.
Notes
  1. *Look for chipotle peppers canned in adobo sauce in the international-foods section of most grocery stores.
