Collaborations with other remarkable visionaries in the industry have expanded both the company’s reach and unique offerings beyond the treasured macaron. A partnership with talented vegan chef Matthew Kenney has launched a 100-percent vegan-friendly menu at their Los Angeles restaurant, which has influenced other Ladurée locations and markets to add plant-based fare to follow suit. The health-conscious recipes include new takes on traditional French favorites, like omelets, onion soup, and croque monsieur, with more modern choices like avocado toast and poke bowls. Julien Alvarez, the new executive pastry chef for La Maison Ladurée and the French-famous worldwide champion of pastry, is continuing to uphold the pedigree of the company’s reputation of commitment to excellence and the best ingredients while bringing the brand to new heights with innovative and visually stunning creations. Tarte citron gingembre (an exquisite lemon and lime tartlet with ginger), noix de coco (a coconut, meringue, and milk chocolate confection that resembles an open coconut), and pépite noix de pécan (a round bite of delicious pecan-filled goodness) have launched in the last year and are sure to both impress and satisfy your taste buds and eye-candy quota.

It would be a faux pas to forget about Ladurée’s humble beginnings on the rue Royale, centered around simple baked goods and copious cups of tea. Afternoon tea has been at the heart of the company’s existence since the start and remains an essential component of its livelihood. “I think tea is becoming more and more important,” Elisabeth states. “I think for developing the tea menus, the tea culture, the experience surrounding it, and products with teas… we have everything to do. It’s just the beginning.” Ladurée has a line of gourmet teas ranging from Earl Grey to their own signature loose-leaf blends. Tea is additionally infused into jellies, pound cakes, macarons, and more to highlight the versatility of the beloved beverage and the brand’s pledge to constant ingenuity and playful experimentation with food.

“People always ask me which macaron is my favorite,” Elisabeth ponders. “Of course, I love the rose and all the floral flavors, but the next one is always the best one. It’s nice how you can always reinvent and play with the macaron.” For some, a delicate French cookie might not classify as monumental, but for Ladurée, the delicious impact of a double-decker dessert has been unforgettable.
